Chocolate Spice Cake

100 g Margarine

200 g Fairtrade Caster Sugar

60 g Fairtrade Plain Sugar

2 Free Range Eggs

1 tsp Fairtrade Cinnamon

1 tsp Fairtrade Mixed Spice

185 g Self-Raising Flour

6 tbsp Milk

1 tbsp Fairtrade Honey

30 g Fairtrade Mixed Peel

Topping:

50 g Margarine

125 g Fairtrade Icing Sugar

60 g Fairtrade Plain Chocolate, melted

2 tsp Fairtrade Cocoa

1/2 tsp Fairtrade Vanilla Essence

1. Heat the oven to 180 degrees (Fan 160 or Gas Mark 3).
2. Cream the margarine and the sugar together.
3. Mix in the melted chocolate and egg yolks.
4. Gradually add the flour, spices and milk.
5. Fold in the beaten egg whites and peel.
6. Pour into a 7 or 8 inch lined tin.
7. Bake for approximately 40 minutes.

Topping:
1. Blend all five ingredients until smooth.
2. Pour over the cake.
3. Place chopped walnuts on top (optional)
